Enjoy this wonderful autumn recipe – healthful and delicious – from our friends at Il Fornaio, just around the corner from us in St Kilda.

Quinoa and Haloumi Salad with Salsa Dressing
Serves 4 | Prep time 30 minutes

2 cups quinoa (mixed); 4 cups water; 2 tomatoes; ½ Spanish onion; 6 basil leaves – chopped; 1 clove garlic; 20 kalamata olives – pitted; 1 avocado; 8 slices haloumi (optional); 1 lemon – juiced; 100ml olive oil; salt and pepper.

Cook quinoa – place in a pot; add the water and some salt, cover. Bring to the boil, then simmer for 15 minutes; when soft, place on a tray and allow to cool.

Dice the tomato, onion and avocado. Add garlic and basil. Fold gently with the lemon juice, oil, salt and pepper.

Add quinoa and olives, mix and plate.

Grill the haloumi and top the salad to finish.
