Eat your way to healthy, glowing skin with this healthful and delicious recipe from our friend, Spa Chef and Nutritionist, Samantha Gowing.

Seared Lime Tofu with Crunchy Shoots, Nuts & Leaves

200 grams firm tofu, sliced into 2cm x1 cm

1-2 tablespoons lime infused olive oil

100 grams rocket washed, dried

50 grams assorted bean sprouts

¼ red onion, very finely sliced

1 stalk celery, finely sliced 5cm batons

2 tablespoons raw almonds, roughly chopped

2 tablespoons sunflower seeds


2 tablespoons lime infused olive oil

I dessertspoon mirin (Japanese rice wine)

½ lime, zest and juice

½ teaspoon grated ginger

  • Brush tofu slices with lime oil
  • Heat the remaining oil in a skillet over a medium heat and light sear tofu slices for 2 minutes either side. Do not burn the oil
  • Whisk dressing ingredients together. Then add rocket leaves, sprouts, onion, celery, nuts and seeds
  • Add seared tofu and combine gently. Drizzle with an extra thread of lime infused oil to serve
